Healthy Shrimp Fettuccine

Large shrimp marinated in white, sauteed with garlic, mushrooms, snow peas, and green onions. Tossed with fettuccine pasta and topped with Romano cheese and chopped parsley.
Ingredients -
1 pound peeled Large Shrimp
1/4 cup White Wine
1 bunch Green Onions (scallions), sliced
2 cloves Garlic, minced
1/2 pound Fresh Mushrooms, sliced
1 (6 ounces) package Frozen Snow Peas
2 tablespoons Olive Oil
1 (8 ounces) package Fettuccine Pasta
1/4 cup chopped Parsley
1/2 cup grated Romano Cheese
 
Preparation:

1. Add shrimp and white wine to medium bowl. Marinate 30 minutes.

2. Heat olive oil in large skillet over medium high heat. Add garlic, mushrooms, and snow peas. Stir-fry 4-5 minutes.

3. Add green onions. Stir-fry 1 minute.

4. When vegetables are crisp tender, add shrimp and wine. Saute until shrimp are pink.

5. Prepare pasta according to directions. Omit any oil. Drain.

6. Add pasta to shrimp mixture. Stir in parsley and Romano cheese. Toss gently.

7. Serve hot.

Shelling Shrimp
Hold onto the shrimp tail shell while careful removing the shell around the body. At this point you have the option of leaving the tail shell on or removing it, depending on the recipe instructions.

Do Not Overcook Shrimp

No matter the cooking method you choose for your shrimp, be careful not to overcook them, as they will toughen and lose flavor.
