Healthy Shrimp And Angel Hair

Canadian bacon browned with bell pepper, white onion, garlic, basil, oregano, and bay leaf. Cooked with flour, tomatoes, green chilies, and tossed with shrimp. Served hot over capellini pasta.
Ingredients -
5 ounces Canadian Bacon, diced
1 Green Bell Pepper, seeded and chopped
1 Onion, chopped
3 stalks Celery, chopped
5 cloves Garlic, minced
2 teaspoons Dried Basil Leaves
2 teaspoons Dried Oregano Leaves
1 Bay Leaf
1/4 cup All-Purpose Flour
1 (l0-ounce) can chopped Tomatoes and Green Chilies
2 pounds peeled Medium Shrimp
1 (16-ounce) package Capellini (angel hair) Pasta
1 large bunch Green Onions (scallions), thinly sliced
 
Preparation:

1. Cook the Canadian bacon in a non-stick skillet. Cook bacon until browned.

2. Add green bell pepper, onion, celery, garlic, dried basil, dried oregano, and bay leaf. Saute 6 minutes.

3. Gradually stir in flour, tomatoes, and green chilies.

4. Add medium shrimp. Cook 7 to 10 minutes or until shrimp are pink.

5. Cook Capellini pasta according to directions. Omit any oil.

6. Toss pasta with shrimp mixture. Stir in green onions.

Thawing Shrimp
Allow shrimp to thaw in the refrigerator 24 hours per pound. You can run shrimp in cold water to knock off the initial ice and decrease thawing time to several hours per pound.

Shrimp Freshness

Shrimp should smell clean, almost odorless. Do not buy or cook shrimp that smells of ammonia.
