Curried Shrimp And Macaroni Salad

Curried shrimp with honeydew melon and water chestnuts, tossed with small sea shell macaroni.
Ingredients -
1/4 cup Mayonnaise
2 teaspoons Curry Powder
1 pound Small Shrimp, cleaned, deveined and cooked
2 cups Honeydew Balls
1/2 cup Water Chestnuts, slivered, drained
1-1/3 cups Dry Conchiglie Piccole Pasta (small sea-shell macaroni), cooked and drained
 
Preparation:

1. In small bowl, combine curry powder and mayonnaise.

2. Add small shrimp, honeydew balls, water chestnuts, and pasta to serving bowl.

3. Gently fold in curried mayonnaise.

4. Chill 1-2 hours.

This salad is quick and easy. It's best if made several hours before serving, to get the full curry flavor. It's been a real hit at potlucks.
