Angel Hair Pasta With Shrimp And Spinach

Angel hair pasta with sauteed shrimp and shallots, combined with chicken broth, lemon juice, and spinach. Seasoned with salt and pepper.
Ingredients -
8 ounces Uncooked Angel Hair Pasta
1 1/2 pounds Large Shrimp, peeled and de-veined
1/4 teaspoon Coarse Salt
1/4 teaspoon Fresh Ground Black Pepper
2 tablespoons Olive Oil
1/4 cup Shallots, finely chopped
1/2 cup Chicken Broth
2 tablespoons Lemon Juice
6 cups Spinach, coarsely chopped
 
Preparation:

1. Cook pasta according to package directions. Drain.

2. While pasta cooks, season shrimp with salt and pepper.

3. Heat large nonstick skillet over medium-high heat. Heat olive oil until hot.

4. Add shallots to skillet. Sauté 30 seconds.

5. Add large shrimp and sauté 3 minutes. Remove shrimp and shallots from skillet.

6. Stir in chicken broth and lemon juice to skillet.

7. Add cooked angel hair pasta, shrimp shallot mixture, and spinach. Heat 1 minute or until spinach wilts. Stir continuously.

8. Serve hot.

Shallots
You can substitute finely chopped red onion if you don't have shallots.

Cooked Shrimp

When cooked correctly shrimp will be firm, form the letter “C”, turn pink, and be slightly opaque.
